Perhaps. Perhaps I can say I’ve accomplished ‘things’ today. So far. There is much of the day left.
Thing 1: I ordered a space heater. I’ve had on a winter hat all day (with earflaps!) because it’s so cold in this apartment. Curse the landlord company and their inability to keep that radiator on long enough to actually blast the wintry air from our measly little studio! (It’s a studio! How hard is it to heat, really?!) Hence, I went shopping for a heater this morning. Funny thing — Bryan insisted I make a spreadsheet of heaters before I bought one. I ended up going with this one from Bed, Bath and Beyond and I’ll update you all on how it works out. At this point I can’t wait for it to arrive. I don’t like layering and wearing hats and gloves and thick socks and all that in my own apartment. I like relaxing in… what does Old Navy call it… lounge wear!
Now, other things accomplished: further updates to the other website, a little bit of writing (yay, but not in the main document, sigh), and I made a really, really good salad with a homemade citrus vinaigrette dressing. It was amazing! I’ll have to post the recipe I used:
- ½ c. orange juice
- 1 – 2 tsp. olive oil
- 1 – 2 tsp. white vinegar (though apple cider vinegar or champagne vinegar would have been better)
- 2 -3 minced shallots (by that I mean a few cloves, minced)
I mixed it all together and tossed it with some mixed green salad and put the salad over a plate of no salt added blue corn tortilla chips that had been smeared with no fat refried black beans and a handful of monterey jack/cheddar cheese (melted in the microwave on top of the beans/chips before I added the lettuce). It was an attempt to mimic a tostada salad from a restaurant here called Cilantro that’s really amazing. I did a pretty awesome job, if I do say so myself. I really enjoyed it!
